We recently visited a new taco place that serves street tacos – beautiful mini-sized tacos which provides the option to try many different flavors. All the fried foods were off limits for me since the fryer was shared with battered items. One of my family members ordered the beer battered avocado taco, and I must admit I was a bit envious! img_0237Many taco seasoning packets are froth with ingredients designed to endure some time on a store shelf or in your pantry. Ingredients like maltodextrin, milk derivatives, corn starch, yellow corn flour, partially hydrogenated soybean oil, silicon dioxide, sunflower and/or cottonseed oil, natural flavor, ethoxyquin (preservative). Oh Yum! And one popular product actually states  “partially produced with genetic engineering.” Not many brands will label their product gluten free…maybe it’s the elusive “natural flavor” that keeps that from happening, or maybe it’s their manufacturing processes. Oh sorry, I digressed. Back to a better topic: Not only is it super-quick to make, you can bet there’s no dairy, no preservatives, no grain, etc. And, while it should meet your expectations, you may actually think it tastes a whole lot better than the store bought stuff! IMG_0190It was a comfort food kind of day. Fresh and delicious, these tacos are super easy to make! Filled with meat, cheese, slaw and tomatoes…just put them all in a gluten free tortilla and you’re good to go! My foodie (gluten-eating) son was in town this weekend, so I decided to make something special for him without mentioning he was eating something gluten free. I chose to smoke a pork shoulder on the grill for several hours. He ate like seven of these. Enough said.
