This is a family favorite inspired by an Iowa restaurant we frequented years ago. Noodles are optional, but that’s one of the ingredients we believe makes this soup so good. Look for liquid smoke in your local grocery store…and be sure you choose one labeled GF!
As a gluten-free for life person, I really missed noodles. Making them may seem like a daunting task, but these are quick and easy to make! We like to put them in soup, cover them in pesto or just eat them with butter and cheese. Pure comfort! The noodles pictured are in the Smoky Beef Soup recipe. Enjoy!
Simply elegant, fantastic flavor and so easy to make, serve this sun dried tomato pomodoro on zucchini noodles (pictured) or your favorite gluten free pasta. It also tastes great cold! It pairs well with that Gluten Free Chicken Marsala in the foreground of the picture. For paleo folks, I imagine ghee could be a good substitute for the butter, but I’ve never tried it!
